PEACHES WITH MASCARPONE LIMONCELLO CREAM

  • 3/4  cup chilled whipping cream
  • 4  ounce container mascarpone cheese
  • 3  Tbs plus 1/2 cup sugar
  • 1  Tbs Limoncello
  • 8  cups sliced peaches
  • 3/4  cup raspberry preserves
  • 1  Tbs  grated lemon peel

Procedure

1   Combine Whipping cream, mascarpone, 3 TBS sugar and limoncello in large bowl.  Beat until soft peaks form.  Combine peaches, preserves, lemon peel and rest of sugar in another bowl.  Toss gently.  Divide berries in 8 bowls.  Top with cream and serve.
