These are soft, cake-like cookies. If too soft on standing, place into warm 250 degree oven for a few minutes. Submitted by Jan Keyton, Highlands Ranch Rotarian
- 1/2 cup (1 stick) margarine or butter
- 1 cup sugar
- 1 large egg
- 2 cups flour
- 1/4 tsp Nutmeg
- 1/8 tsp Ginger
- 1/8 tsp salt
- 1/2 tsp Baking soda
- 1/4 tsp Cinnamon
- 1/8 tsp ground Cloves
- 3 medium fresh ripe Peaches
- 1/2 cup raisins (optional) – or cinnamon chips & walnuts: 1/2 cup each
Procedure
1 Cream margarine and sugar in a bowl. Add egg and beat until light and fluffy.
2 In another bowl, mix flour and spices, add to egg mixture, a little at a time.
3 Peel, pit and finely dice peaches; stir into cookie mixture.
4 Stir in raisins, if desired. Drop dough by full rounded teaspoons onto cookie sheet.
5 Bake at 375 degrees 18-20 minutes, until cookies are light brown on top.
6 Cool thoroughly on wire rack before storing.

Yield: 4 dozen 2.5 in. cookies
